Teresa Chan fell in love with camping after going through Parks Canada's Learn to Camp initiative, which teaches families the basics of camping. She now works with youth who have recently come to Canada and encourages them to try camping as well.

Chanenjoys preparing hot pot in the wilderness and says it can be a "very creative" dish.

She says there is no fixed recipe for hot pot as "it has a lot of varieties, depending on our tastes and [the] seasons." But she's offered up one to try on your next camping trip.

What you need

Tools/utensils

  • Shallow pot with lid
  • Gas camp stove (and fuel)
  • 2 to3 litres water
  • 2 hot pot strainers(to scoop out food from the hot pot)

Ingredients

  • Assorted beef balls, fish balls and shrimp balls
  • Thinly sliced meat (beef, pork, lamb or chicken)
  • Sausage
  • Tofu
  • Assorted vegetables (leafy greens, root vegetables)
  • Mushrooms
  • Tomatoes
  • Noodles
  • Condiments: Soy sauce, BBQ sauce, sesame oil, chili flakes

Instructions

  1. Add water to pot and boil.
  2. Add desired ingredients for soup base. (For example, let tomatoes simmer for 5-10 minutes.)
  3. Place hot pot add-ins into pot.
  4. Keep the broth at a steady boil so the add-inscookproperly.
  5. Add hot water as needed as broth reduces.
  6. Enjoy with condiments!
